Tacos are the easiest way to make a weeknight feel festive: a warm filling, tortillas and bowls of toppings go on the table, and everyone builds their own. The same base works for a busy family weeknight and for weekend entertaining.
The most popular tacos are minced meat tacos, pulled pork tacos, crispy chicken tacos and smash tacos, plus the bowl version, the taco bowl. Add the spices to the mince only once the meat has browned, along with a splash of water, so the seasoning clings to the meat.
Pulled pork cooks in the oven at 120–150 °C for 5–8 hours, until the meat pulls apart with a fork. Chicken tacos go well with a sauce of yoghurt, lime and chipotle. A trio of toppings – salsa, something crunchy and something tangy – keeps tacos balanced.
Warm the tortillas in a dry pan or wrapped in foil in the oven so they stay pliable and don't crack. Serve the fillings in separate bowls, because ready-assembled tacos go soft quickly. Tip: season the filling a little saltier than usual, as the toppings dilute the flavour.
Tacos are also a good way to use up leftover vegetables and the previous day's meat. With Ruokaboksi taco recipes, the ingredients arrive pre-measured at your door, so you can host a taco night midweek without any planning.
