A good soup starts with a base of onion, garlic and root vegetables, sautéed until soft before adding liquid. This lets the flavour concentrate, giving the soup a rich taste without needing extra additives or ready-made sauces.
The most popular are creamy vegetable soups, salmon soup, and filling stew-like or minced meat soups, which can be made in a larger batch and kept in the fridge for a few days. Soup also freezes well, so you can build up a stock of ready meals in the freezer.
You can adjust a soup's texture by blending part of the vegetables with a stick blender while leaving the rest in pieces – that way the soup is both rich and has something to bite into. Add cream or coconut milk only at the end so it doesn't curdle in the soup.
