Quesadilla recipes
Quesadilla recipes bring a taste of Mexico to weeknight dinners – our chefs pick the ingredients, delivered to your door.
A quesadilla cooks best over medium heat in a dry or lightly greased pan: a pan that is too hot burns the tortilla before the cheese has time to melt. Flip the quesadilla only once with a spatula, when the underside is crisp and golden.
Spread the cheese evenly over the whole tortilla right to the edges so it holds the filling together when you cut it. Vegetable fillings such as pepper, onion and sweetcorn are best fried separately first, so excess liquid doesn't get trapped inside the tortilla.
The mince or chicken can be swapped for chickpeas or halloumi in the same recipe if needed. In Ruokaboksi's recipes, the tortillas, cheese and filling come in just the right proportions per serving.
