A casserole is a handy way to put together a meal that cooks by itself in the oven with no need to watch it. A classic casserole bakes at 200–225°C for about 25–40 minutes, depending on the thickness of the filling and the dish you use – a wider, shallower dish bakes more evenly than a deep, narrow one.

The most popular are potato, minced meat or fish bakes and creamy gratins with cheese browned crisp on top. You can also add beans or lentils to a casserole for a hearty vegetarian version without losing texture or flavour.

If the top browns too fast before the inside is cooked through, cover the dish with foil for the rest of the baking time – that way you get an even result every time.
